Superfood Salad

- 2 bunches of curly kale, torn and tough stems removed
- 1/2 red onion, thinly sliced
- handful of cherry tomatoes, halved
- 1 cup dried cranberries
- 1 cup blueberries
- 1 cup cashews
- 1/2 cup sunflower seeds

For the dressing:

- 2 tablespoons sesame seeds
- 1/4 cup apple cider vinegar
- 1/2 cup olive oil
- 1/2 cup raw honey
- 1/4 teaspoon paprika

Whisk together the dressing and toss with the salad.  The key to this salad is dressing it and letting it rest several hours before serving it. This will make the kale taste like…well not like kale.  It will keep well in the refrigerator up to 5 days, with the dressing on.
